10 Minute Meals - Aynsley's potstickers

Ingredients
6 trader Joe’s chicken potstickers
1 ½ cups of pre-cooked edamame (also can buy at Trader Joe’s)
1 cup of rice
2 ¼ cups of H2O
¼ Tbsp veggie oil

Directions
Put oil in pan with potstickers flat side down. Place lid on potstickers and cook on high for 5min.

While that is cooking, put cup of rice and 2 cups of water in microwave safe bowl for 8min.

Add 1/4 cup of water to potstickers turn down to med low.

Add cup of edamame in a small sandwich bag to the microwave with the rice and cook for 3 more min...that's it done!!! I like to dip it in soy sauce.

10 minute meal - Corey's Taco Soup

Ingredients
1 lg onion chopped (optional)
1 pkg taco seasoning
1 can whole kernel corn, undrained
1 can black beans, undrained
1 can kidney beans, undrained
1 can fat free refried beans
2 cups chicken broth
1 (28 oz.) can diced tomatoes
1 (14 oz.) can spicy seasoned tomatoes (jalapeno)

Directions
(Optional) Sauté onion until soft in large pan with non-stick spray.
Add all ingredients into pot (including optional sautéed onion) and simmer 30-45 minutes.
Can also use Crockpot - cook 8 hours on low, 4 hours on high. If you put this in the crockpot in the morning before work - it really is a 10 minute meal!

For those that have followed weight watchers the point equivalent for this recipe is 1 point = 1 cup.

10 minute Meals - Hoagies a la Kiele

Ingredients
Hoagie Rolls (found in Bakery Section)
Lunch Meat
Shredded cheese
Sliced Onions
Other veggies you like


Directions
Set oven to broil. Make an open-faced sandwich. I like to put cheese on one side and meat and veggies on the other. Place on a cookie sheet – then stick in the over till edges are light brown. Put sandwich together and dip in apple cider vinegar as you eat it.

10 minute Meals - Erin's Tofu Stir Fry

Ingredients
1/2 cup shredded carrots
1/2 cup chopped onions
1/2 cup broccoli
1/2 cup sliced red, yellow and green peppers
1 package already cooked teriyaki seasoned tofu
1/4 cup coconut water
1/4 cup teriyaki sauce
2 Tablespoons toasted sesame seeds
1 Tablespoon Olive Oil
1 package already cooked brown rice from Trader Joe’s (use as much of the rice as you want)

Directions
Get out your wok or frying pan (wok is best). Get out all ingredients and put to the side of the wok. Put the burner on medium high heat and warm up the olive oil. Add the onions and cook for 2 minutes. Then add everything else except the toasted sesame seeds. Turn heat to high and cook while stirring continuously for 6 minutes. Don't overcook the vegetables as they lose a lot of nutrients. In the meantime, put the Trader Joes rice in the microwave and heat for 2 minutes.

***All ingredients can be purchased at Trader Joes. Most of them are ready to go and already chopped up making it quick and easy for you. Coconut water is substituted for coconut milk because it is low fat although if you are trying to beef up or don't care about calories go for the coconut milk instead.

Budget Bliss... and Worksheet:)



Last week we had another great Enrichment taught by Mike Cunningham! We learned all about budgeting, saving for the future, banks accounts, 401K's etc. There was so much to learn and so much to think about for our financial futures. Mike really knows his stuff and broke it down in a practical way. We finished the night off with homemade ice cream sandwiches - thank you to all the sisters who contributed!
